Ground Turkey Stuffed Peppers
You know those dinners that you’ve made a thousand times, that you never even look at a recipe when you make it? That’s how these ground turkey stuffed peppers are for me. My family has been making a variation of these for years – sometimes with pork or chicken sausage, I’m sure with ground beef at some point… but this version with ground turkey is my favorite.
Not only are they super easy to make, but they’re that perfect mix of comforting and nutritious. Plus, they make GREAT leftovers. All of your coworkers will be jealous of your lunch the next day, trust me 😉
Ground Turkey Stuffed Peppers
ingredients
3 peppers
1 onion
1/2 tbsp olive oil
2 garlic cloves, minced
3/4 lb ground turkey
1 can crushed tomatoes (28 oz)
1/3 cup cooked brown rice
1 tbsp chopped basil
1 tsp red pepper flakes (optional)
salt and pepper
1/4 cup grated parmesan cheese
1/4 cup of tomato sauce
mozzarella or Italian blend shredded cheese (optional for on top!)

Preheat the oven to 375.
step two
Roughly chop the onion and sauté in olive oil over medium heat. When it starts to soften, add minced garlic. Cook together for about 5 minutes, stirring frequently.

Add the ground turkey and break up the meat as it cooks. Once it’s cooked through, add your can of crushed tomatoes, salt, pepper and red pepper flakes. Simmer for about 5 minutes.

Lower the heat and add cooked brown rice, basil, and parmesan cheese. Stir to combine.

Add 1/4 cup of tomato sauce to the bottom of an oven safe roasting dish. Cut your peppers in half lengthwise. Clean out the inside of each half and lay skin side down in the baking dish. Spoon the ground turkey mixture into each half. Top with shredded cheese.

Bake for 30 minutes. Your fork should be able to pierce the pepper easily when they’re done!

I am such a terrible cook but stuffed peppers have always intrigued me! This may be something I can pull off…just maybe.
