Taco Week: Mango Salsa
Welcome to Day 2 of Taco Week!
Today’s recipe is Mango Salsa. Mmm.
I personally like to keep this salsa chunky. It adds nice texture to the fish tacos. If you are making this for a party and you only want to serve it with chips, then by all means, throw it in the food processor and chop it a little finer.
Here’s how you make it!
Ingredients
3 small ripe champagne mangos
2 large tomatoes
1 small shallot
1 clove garlic
1 lime
salt and pepper
dash of cumin
dash of chili powder
Cut the mango and tomatoes into small bite pieces. Finely chop the garlic and shallot. Mix with the juice of 1 lime. Toss it all together. Add a dash of cumin and chili pepper. End with salt and pepper to taste!
Dig in!
So far, we have Tomatillo Salsa and Mango Salsa… what are we adding to these tacos tomorrow?!
