The Easiest Tomato, Corn, and Mozzarella Salad
It’s a double post day over here! Since I just hit publish on my post all about camping in an RV, I thought it would be timely to also share this easy tomato, corn, and mozzarella salad recipe. To be honest, it’s barely even a recipe – but after some requests for it, I remembered that not all recipes have to be complicated! Sometimes all you need are a few fresh ingredients to make a delicious meal, and there is absolutely nothing wrong with that. We brought this salad on our “camping” trip and served it alongside chicken sausages and brats, but at home, we usually eat it with salmon. So so yum!
Tomato, Corn, and Mozzarella Salad Recipe
Ingredients
2 cups of corn (can be cut off the cob or frozen)
2 cups cherry tomatoes, halved
1 cup mozzarella pearls or ciliegine (cherry size)
1/2 tbsp olive oil
1-2 cloves garlic, minced
salt and pepper
Instructions
- Either grill your corn on the cob or heat up frozen corn on the stove. Set in a mixing bowl to cool.
- Cut tomatoes in half and add to the bowl of corn.
- Add mozzarella pearls or ciliegine (pictured!), minced garlic, and olive oil to bowl. Mix together.
- Season with salt and pepper to taste.
- Cover and let sit until you are ready to serve. Store in the refrigerator if you won’t be eating for a while to keep it fresh.

Notes
I personally prefer mozzarella pearls, but they can be hard to find sometimes! Ciliegine are pretty much the same thing, just a little bit bigger. If you can't find either of those, you could also cut (or rip) a big ball of fresh mozzarella, too!
