Tomato and Avocado Summer Salad
I love a good summer salad. Even in the middle of winter! Tomatoes and basil and avocados are just a few of my favorite things. And when you put them all together, it creates the perfect salad. Whenever I spend some time in the sun, I crave this salad. It’s fresh and easy and everything in it is good for your body! Super healthy and super easy? Yes, it’s true!!
Here’s how you make it!
Ingredients
4 Tbsp Olive Oil
2 Tbsp Balsamic Vinegar
Salt & Pepper
2 Avocados
3 Tomatoes
Handful of Basil
1/4 Multigrain Baguette
Mozzarella Cheese (cubed)
1/3 cup Langostinos or Shrimp
1 large clove of Garlic

Cut the piece of baguette in half lengthwise and toast in the oven. When it has dried out a little bit and turns golden, take it out and set aside.
Half the tomatoes.
Cut out the middles and dice the rest.
Add the chopped tomato to a mixing bowl.
Cube some mozzarella cheese. Add it in!
(I didn’t add a measurement for this… just add as much as you like.)
Half the avocados. Without breaking the skin, slice the avocado all the way across both ways to create little cubes.
Use a spoon to scoop it out and add it to the mixing bowl.
Dice the garlic and add it to the bowl.
If you bought frozen Langostinos, defrost them and add 1/3 cup to the salad. You could also cook them fresh, or use shrimp instead. The next time I make this, I want to add grilled shrimp!
Wash a handful of basil and roughly chop.
Remember that bread you toasted? Cut it into bite sized cubes.
It’s all coming together!!
Mix your dressing: oil, balsamic vinegar, salt and pepper. Make sure you taste it- you can always add more oil or more vinegar to make it just right.
Pour it over your salad.
Toss it all together.
And then you are ready to eat!

So easy and so fresh.
