Valentine’s Day Morning (+ Zucchini Quiche Recipe!)
We all know Valentine’s Day is this weekend – so, do you know what you’re doing?! Whether you’re single (holla!) or in a relationship, I think you should start the day with cozy snuggles, lots of spiked coffee and a homemade breakfast…
…and maybe some jewelry…
…and definitely flowers!
Before we talk about how cute that vase is, let me show you this recipe! If you have a sweet tooth, I’ve got a video recipe coming this week – but if you’re anything like me, brunch = eggs. This quiche is easy and delicious + I had some fun attempting cheesy dough hearts on top! More on that in a bit…
Ingredients
2 pie crusts
2 zucchinis
1/2 cup diced red onion
1 garlic clove
olive oil
4 eggs
1/4 cup half and half
1/2 tbsp dijon mustard
dash of red pepper flakes
salt + pepper
1/2 cup gruyere
Dice the red onion/garlic and thinly slice the zucchini.
Saute the garlic and red onion in olive oil for about 5 minutes, or until the onion starts to soften. Stir in the zucchini. Cover the pan and let it steam for a few minutes, then uncover and cook until the zucchini has softened.
While that is cooking, whisk 4 eggs, salt, pepper, dijon, red pepper flakes and half and half.
Once the zucchini mixture is done, transfer to a bowl to cool. If you add them right from the hot pan, you risk scrambling the eggs – we don’t want that! Stir in the gruyere cheese and veggies.
Pour into your pie pan. I used a store-bought dough that rolls right out, just because it saves so much time! Top with a little bit more cheese and let it bake in a 375 degree oven for 20 minutes.
While that’s baking, roll out your other pie crust. I used a sharp floured knife to cut hearts, but if you have a heart shaped cookie cutter, you could use that, too!
Take the quiche out and place the dough hearts on top. I wanted these to be cheesy hearts (because what says love more than cheese?), but you could also just brush a little melted butter over them, too! Pop it back in the oven for another 25 minutes.
While that’s baking, make some coffee and if you’re the gift giving kind, get those goin.

And then it’s time to eat!
Let the quiche cool for just a few minutes before you cut into it.
See the hearts? A little bit? Again, if I didn’t cover them with cheese, I think they would be more prominent… but I stand by my decision, because, yum.
And how pretty is the homemade quiche next to my pretty Kalla bouquet?! They have some more traditional arrangements, too – but I love how whimsical and fun Bea and the Lady is.
