Vegan Fudge (with a crunch!)
This vegan fudge is perfect for any sweet tooth, and it’s so easy to make!
Happy Monday! I know I’ve been slacking on the Mindful Monday posts recently – I’ve honestly just felt a bit of writer’s block around it! Luckily, I already have a topic in mind for next week, and I’ve been sharing my weekly intention and a quote of the week in my email blasts!

But ANYWAY. Back to this vegan fudge! You might remember it from this post about Juice Plus+, but I thought I’d separate it into it’s very own post so it’s a little easier to find every time you want to make it… because you guys are going to be HOOKED.
If you don’t have Juice Plus+ Complete Powder, you can use any chocolate protein powder you like. If you don’t have any chocolate protein powder and have no interest in buying it, you could also just use cocoa powder. My friend Emily (creator of Lil Bucks!) has a version of the recipe you can follow if you’d rather go that route. That being said, it’s nice to get a little extra protein into sweet treats!
vegan fudge recipe
ingredients
1/2 cup virgin coconut oil, melted
1/4 cup almond butter (or nut butter of choice)
1/2 cup Juice Plus+ Complete, Chocolate flavor
3 tbsp pure maple syrup
1 tablespoon pure vanilla extract
pinch fine grain sea salt, to taste
1/2 cup Lil Bucks (+ more sprinkled on top)
instructions
- Whisk together melted coconut oil and almond butter.
- Whisk in Juice Plus+ Complete, maple syrup, vanilla extract, and salt.
- Fold in Lil Bucks sprouted buckwheat seeds.
- Pour the mixture into a loaf pan lined with parchment paper.
- Sprinkle Lil Bucks on top.
- Put in the freezer to set for 1 hour.
- Lift the parchment paper from the loaf pan and peel the fudge off. Cut into squares and enjoy!

If you cut this fudge into 16 pieces, each square will be 130 calories, 10 carbs, 9 grams of fat, 3 grams of protein and 4 grams of sugar. I plugged all of the ingredients into My Fitness Pal to get these stats!
additional tips for the perfect vegan fudge
Melt the coconut oil and stir in the wet ingredients before you add the protein powder.
If you don’t want to make this with protein powder, you can use cocoa powder instead! If you do that, you might want to add a little bit more maple syrup to sweeten it – but that’s completely up to you!
Don’t forget to line your loaf pan with parchment paper. It makes it SO much easier to lift the fudge out to cut.
