Watermelon Mojito
We have a new drink for this summer: The Watermelon Mojito.
Before you assume it’s too complicated for you, let me just say- it’s not as hard as it sounds! It may seem fancy, but in just a few steps you will have a refreshing drink for your next party, girls night, date night, or weeknight after a long day at work?
Hey, I’m not judging.
This recipe makes about 4-6 small drinks, depending on the size of your glasses and the amount of ginger ale you use.
Here’s how you make it!
Ingredients
1 small bunch of Mint leaves
1/8 of a large Watermelon
1 1/2 cups white Rum
4 Limes
1/2 cup Simple Syrup
Ginger Ale (to top it off)
Clean the mint leaves and add them to the bottom of the pitcher. Use the bottom of a wooden spoon to bruise them a little bit. Cut the watermelon into large chunks. Add that to the pitcher as well.
Muddle the watermelon and mint together until you get a pureed consistency.
Stir in the lime juice. Stir in the simple syrup.
*Making simple syrup is very easy. In a medium saucepan, combine 2 cups of sugar and 2 cups of water. Bring it to a boil and stir. Once the sugar has dissolved, turn off the heat and let it cool. (Stevia products work too! Just make sure you look at the conversion chart on the packaging)
Stir in the rum.
Put some ice in your glasses. Add the watermelon mixture to it.
Fill to the top with ginger ale. Garnish with a slice of lime or extra mint leaves.
