Zucchini Noodles with Pesto
I’m going to be honest with all of you, these noodles don’t taste like pasta. They aren’t going to replace my carb cravings, but they are definitely delicious. I topped the noodles with a lemony pesto, tomatoes, and pine nuts. So easy and so good!
Here’s how you make it!
1 cup cherry/grape tomatoes
roughly 1/2 cup basil
1/3 cup cheese
1 tbsp pine nuts
1 garlic clove
2tbsp olive oil
salt and pepper
Combine basil, lemon, cheese, pine nuts, garlic, olive oil, salt and pepper in a food processor.
Using a Julienne Peeler or Vegetable Spiralizer peel the zucchini into noodles.
Stop when you get to the seeds.
Cut the tomatoes in half and add the pesto to the noodles.
Stir to combine.
Garnish with more pine nuts, if desired.
