Air Fryer Breakfast Potatoes
Happy Monday! You might recognize this recipe from Instagram, and I honestly wasn’t even planning on sharing it here, too. But after making them again a few days ago, I thought it’d be nice to have it where it’s a little bit easier for everyone to find!
We’re BIG brunch fans over here, so when I started brainstorm recipes for my Air Fryer, my mind immediately went to breakfast potatoes. Sure, you could also do this in the oven – but the air fryer helps get them crispy with way less oil which is a huge perk for at home brunch when you want something yummy… but also relatively healthy 😉
air fryer breakfast potatoes recipe
ingredients
2 potatoes, cubed
1/2 red onion, thinly sliced
1 orange (or red) pepper
1.5 – 2 tbsp olive oil
1 tsp sea salt
1 tsp garlic powder
2 tsp paprika
how to make air fryer breakfast potatoes
step one
Spray air fryer basket with olive oil or avocado oil spray.
step two
Place scrubbed and diced potatoes in a bowl. Toss with olive oil.
step three
Combine garlic powder, paprika, and sea salt. Mix into the potatoes to season.
step four
Put seasoned potatoes in the air fryer basket and set to cook at 400 for 15 minutes.

While that’s cooking, thinly slice onions and cut the pepper into bite sized pieces.

Add peppers and onions to potatoes and air fry for another 15 minutes.

Top with a fried egg and fresh green onions or chives!
