Easy Party Dessert: Ice Cream Nachos
*This post was sponsored by Hudsonville Ice Cream, but (as always!) all opinions are my own. Thank you for supporting the brands that make Lake Shore Lady possible!
Who doesn’t like ice cream over the summer? Anyone? Bueller?? There’s something so nostalgic about a scoop of your favorite flavor on a warm day… but not everyone always wants a whole cone to themselves, especially at a BBQ or pool party. The best solution? Ice Cream Nachos!
I’ve teamed up with Hudsonville, one of my favorite Midwest ice cream companies, to show you this simple non-recipe recipe. We always have their ice cream in our fridge (we usually get it at Mariano’s, but you can find a store near you with this scoop locator!) and while they’re usually in there for Adam’s sweet cravings, their new Dairy Free flavors are in there for ME! I’m not lactose intolerant, but if you are or you just like coconut cream and oat milk (yum!), you’re going to love these! We’ve tried most of the Dairy Free flavors since they launched and Cherry Fudge is my favorite (Peanut Butter Truffle is Adam’s!).
We mix and matched regular and Dairy Free flavors for these “nachos”, but you can definitely choose one or the other when you make it. You can also play around with the toppings – there are no rules here! And if you have kids at this party, get them involved! There are few things cuter than giving your nephews control of the ice cream toppings ?
Start by breaking up the cones. I couldn’t find regular waffle cones, so I got waffle cone bowls, and they honestly worked even better than the cones did! You want to break them up to the size of a chip. Think something you can scoop with!
Then add the ice cream! I used Hudsonville’s Dairy Free Mint Fudge Cookie, regular Seaside Caramel, Dairy Free Cherry Fudge, and regular Chocolate Chip Cookie Dough. Definitely 4 of our favorites!
Since they wouldn’t be nachos without some sort of sauce, drizzle chocolate syrup all over the “chips” and ice cream! Then add some raspberries and blueberries for a little freshness. I always want fruit on my ice cream, especially when it’s in season!
Fill any gaps with whipped cream, and then shower it all with your favorite sprinkles. This is the step that’s especially fun for the kiddos!
And of course, you can’t forget a few cherries on top!
Cheers!
Obviously you’ll need to eat them quickly, so don’t make them/serve them until your party is ready for dessert. But don’t worry, I promise they wont last long! They’re very hard to resist!
Also, who wants free ice cream this summer?
The Chicago Park District has partnered with Hudsonville to celebrate its 85th birthday (!!!) with FREE ice cream at all of their Movies in the Park events this summer! I always love going to the one in Maggie Daley Park – it’s such a great excuse for me to go downtown and be a tourist in my own city!
